Executive Chef - St. Thomas University (Fredericton)

Executive Chef – St. Thomas University Aramark is looking for an Executive Chef to lead the campus food service operation. The role requires culinary expertise, dedication, patience, and strong leadership to maintain high quality and healthy menu offerings for students, faculty, and guests.
Responsibilities Responsible for culinary production of proprietary healthy, hot, and cold stations.
Select and develop recipes and standardize production recipes to ensure consistency.
Manage a Sous Chef and brigade of cooks, ensuring operational procedures are followed.
Oversee weekly menu planning from new or formulated recipes in the PRIMA database.
Prepare and execute campus caterings for faculty, students, and guests as required.
Establish presentation techniques and quality standards, and plan and price menus.
Estimate food consumption and remain within budget for food and labor costs.
Conduct inventory, place orders, receive deliveries, and reconcile orders as required.
Train, manage, and direct kitchen staff; coordinate all culinary related activities.
Ensure proper equipment operation and maintenance; ensure proper safety and sanitation.

Qualifications Culinary degree or diploma and hospitality training is required.
Minimum 3-5 years culinary management experience is required.
Previous experience managing a unionized staff is a definite asset.
Advanced knowledge of the principles and practices within the food profession.
Well-developed communication and interpersonal skills to establish and maintain positive working relationships with clients, customers, staff, and management.
