We are looking for a Cook 2  to join our new restaurant opening this Fall 2026. The ideal candidate is ready to roll up their sleeves, lead with heart, and help us build something exceptional!

Union Hotel will be hosting a Job Fair at Hotel Victoria on August 19, 2026, from 9:00 a.m. to 11:00 a.m. and 4:00 p.m. to 6:00 p.m.

Your Role

The position of Cook 2 is a versatile and flexible cook who is familiar with all areas of kitchen operations and production. They are responsible for the general production of all menu items and participate in all cooking and food preparation processes. They are focused on providing exceptional service and creating memorable dining experiences for all guests by ensuring all food items are ready on time and ensuring quality control as through strictly following recipes and production standard. They execute recipes to specification, maintain station organization and support banquet and à la carte production under the direction of the Executive Chef and Sous Chef.

The Cook 2  is primarily responsible for:

• Operating an assigned station independently during service while maintaining organization, consistency and efficiency.
• Preparing and maintaining station mise en place according to established recipes, quantities and service requirements.
• Preparing, cooking and presenting proteins, vegetables, sauces and other menu items according to established recipes and specifications.
• Applying appropriate cooking techniques while consistently meeting plating, portioning, presentation and quality standards.
• Supporting timely ticket execution while maintaining food quality and consistency throughout service.
• Preparing full-course meals, individual dishes and other food items independently or as part of a collaborative culinary team.
• Preparing meals for guests with allergies, intolerances and special requests while following food safety and cross-contamination prevention procedures.
• Supporting menus, special events and banquet production in collaboration with the Sous Chef and Executive Chef.
• Contributing to food cost control and waste reduction through effective production planning, portion control and proper product utilization.
• Communicating product shortages, preparation concerns, equipment issues and station requirements to the Cook 1 or Chefs in a timely manner.
• Maintaining organized refrigerators and work areas, including proper product rotation, labelling, storage and handling.
• Monitoring and changing fryer oil regularly to maintain food quality, safety and kitchen hygiene standards.
• Maintaining clean, safe and organized kitchen areas and ensuring equipment and utensils are properly used, cleaned and maintained.
• Demonstrating professionalism, reliability and strong culinary skills while contributing positively to the culinary team.
• Building positive, professional and collaborative relationships with team members and departments throughout the hotel.
• Following all hotel food safety, health and safety, security and workplace policies and procedures.

What We are Looking for...

• 1-3 years of experience in an upscale adult contemporary restaurant environment
• Previous experience in a premium restaurant providing an elevated service
• Proven experience in advanced cooking techniques (experience with tandoor and robata grill preferred)
• Food Safety certification
• Ability to work lunch and dinner service (including evenings, weekends, and holidays)
