Tâches

Nettoyer les viandes en vue de la préparation pour l'emballage ou pour la coupe
Couper des carcasses, des flancs et des quartiers
Préparer les différentes coupes de viande commandées par les clients
Couper, parer, et préparer des coupes régulières de viande
Envelopper et empaqueter des viandes préparées
Désosser des viandes
Peser les viandes pour la vente
Superviser d'autres bouchers, dépeceurs et poisonniers
Hacher la viande
Former les dépeceurs et dépeceuses
Faire des saucisses de spécialité
Trancher des viandes rôties
Préparer des assortiments spéciaux de viande, de volaille et de fruits de mer pour l'étalage
Façonner et ficeler les rôtis et autres viandes, ainsi que les volailles ou les fruits de mer
