Participates in the ongoing quality improvement of food products produced

• Maintains compliance with all public health regulations and food safety standards
• Collects information on leftovers/shortages of food items and makes recommendations to adjust production sheets
• Monitors food supplies in the stockroom and rotates them as required. Informs Supervisors and Food Services Workers of shortages
• Prepares food and ingredients to be cooked or baked by cleaning, cutting, portioning, measuring, and mixing, using a variety of kitchen utensils, knives, and large-quantity cooking equipment such as mixers, steamers, ovens, combi-therm ovens, stoves, meat slicers, vats, roasting pans, fryers, etc.
• Cooks food and bakes desserts using standard recipes (e.g. special dietary requirements) and modifying consistency according to the special needs of client groups (e.g. pureeing and mincing). Portions and places food in containers according to production sheets for delivery by Food Services Workers
• Ensures food is cooked, prepared, stored, and served at proper temperatures as required per established guidelines
• Records temperatures as required for food and equipment and confirms that temperatures are within established guidelines. Prepares cold food such as salads, sandwiches, sandwich fillings, and meat/fruit trays, etc. Labels and retains daily food samples
• Provides work direction to Food Services Workers by giving instructions, providing training on new tasks, and providing additional information related to meals, preparation, and/or service
• Retrieves food supplies and labels and stores leftovers. Directs Food Services Workers on these duties as required
• Requisitions food supplies from the Materials Manager Assistant on a daily basis or retrieves them from storage areas
• Informs the supervisor of food supply levels such as stock levels and expiry dates, and other items required such as smallwares, etc.
• Performs calculations to prepare statistical reports on food usage if required
• Answers telephones and takes messages. Secures the work area by locking doors, windows, freezers, etc.
• May place food orders within budget guidelines using a computer
• Prepares all food items on the special diets list to accommodate the unique dietary requirements of clients
• Delivers, arranges, and replenishes food to service areas and may assist with counter service
• Oversees daily operations in the kitchen in the supervisor's absence.

Considerable experience in preparing and cooking food in a large-scale food service setting

• Successful completion of the Food Handler/Safety Awareness Program offered by Toronto Public Health
• Graduation from a two-year college cooking program from a recognized institution, or holding a Red Seal Certificate, and/or an equivalent combination of education and/or experience. Completion of a Food Service Worker certificate from a registered college is an asset.

Knowledge of the operation and care of kitchen equipment

• Knowledge of the sanitation code, hygiene, and safe food handling techniques
• Ability to provide effective work direction to kitchen staff
• Ability to lift heavy cooking equipment and supplies
• Ability to work shifts, weekends, and holidays
• Ability and willingness to provide a service that enhances the dignity and respects the cultural and racial diversity of HIPS clients and staff
• Ability to demonstrate excellent customer service skills

Shift Information

• Part-time employees must be available for day, afternoon, and evening shifts across four (4) days per week, including a minimum of two (2) weekend days (Saturday and Sunday).
• All shifts are on an as-needed, part-time basis (Sunday–Saturday), ranging from approximately 3 to 8 hours in length.
• Shifts may be scheduled in advance or assigned same-day or on-call.
• Training may be scheduled during days, evenings, or weekends.
• Shifts are assigned based on portfolio and may take place across multiple sites within that portfolio.
• Portfolio assignments are determined by operational requirements and site needs, and may involve travel between locations.
