- Couper et peser les filets de poisson conformément aux spécifications
- Couper, nettoyer et parer le poisson et les fruits de mer avant la mise en vente ou le conditionnement
- Inspecter les filets de poisson afin de déterminer la taille et le nombre optimaux des filets
- Écailler le poisson, le couper, séparer les filets et enlever les viscères à l'aide d'un couteau
- Conditionner les filets pour l'emballage ou la congélation
- Vérifier les produits et l'emballage pour déceler les irrégularités et assurer le respect des normes de l'entreprise et faire les ajustements nécessaires aux machines
- Décortiquer des homards et d'autres crustacés et en retirer la chair pour la mise en conserve ou un autre traitement
- Enregistrer des renseignements sur la production
- Régler et manoeuvrer des machines pour mettre en boîte, en sac, en caisse ou emballer de toute autre manière les produits du poisson et de fruits de mer
- Régler et manoeuvrer des machines pour nettoyer, couper, faire cuire, fumer, saler, déshydrater ou traiter de toute autre manière les produits du poisson et de fruits de mer
- Peser le poisson ou les crustacés, enregistrer leur poids et les placer dans la glace concassée
- Nettoyer les machines et les aires de travail
- Trier les poissons selon l'espèce, le poids et la destination
