The Bakery Store Manager at Onua Bakery Café is an experienced baker and culinary professional who brings both operational leadership and hands-on expertise to the role. This position is responsible for ensuring the bakery and café consistently meetand exceed key objectives, including delivering high-quality products, exceptional customer service, and achieving financial targets. In addition to daily oversight of bakery and café operations, this role involves managing ordering, inventory, merchandising, labour scheduling, and customer service standards. The ideal candidate leads with a service-first mindset, ensuring a consistently positive experience for team members, customers, and suppliers alike.
Bakery Operational Management
Ensure efficient day-to-day operations of the café, maintaining the highest standards of product quality, service, and cleanliness.
Oversee all day-to-day activities in the bakery and café, ensuring smooth coordination between production, service, and retail.
Implement and maintain clear operational procedures (SOPs) for baking, service flow, cleaning routines, and equipment handling, ensuring consistency across all shifts.
Act as the first point of contact for resolving baking or production issues, troubleshooting problems in real time to maintain product quality and minimize waste.
Monitor daily execution to ensure high standards of quality, timeliness, and customer satisfaction are consistently met.
Regularly review and adjust operational processes, ensuring optimal efficiency and customer satisfaction.
Recruit, train, mentor and manage a high-performing, bakery and cafe operations team.
Consult with the owner regarding hiring, staff reviews, discipline and termination as needed.
Train and support staff on best practices in workflow, production efficiency, and proper use of bakery and café equipment.
Conduct quarterly and annual performance reviews, with ongoing, informal & formal feedback and encouragement.
Plan and execute regular staff meetings to provide information, improvement, and training.
Work with Supervisor - Front of the House - FOH, Head Baker and Pastry Chef to facilitate team involvement in occasional social or team building events.
Ensure a positive culture is maintained in the bakery and café environment including teamwork, staff morale, and positive communication.
Customer Experience
Lead by example by showcasing exceptional customer service to customers and staff.
Develop the entire team to achieve a friendly, welcoming environment and provide attentive, individualized care to each customer.
Resolve customer complaints professionally, always striving for full customer satisfaction and applying feedback to prevent future issues.
Work with Onua's Management to reduce or maintain the café budget regarding margins for labour, beverage, food, merchandise, and supply costs.
Monitor daily sales and adjust as needed to improve profitability (i.e., Regularly analyze sales data to identify trends, potential areas for growth, and areas of concern.
Strategize ways to increase sales with the Management Team.
Schedule Management
Manage the schedule and make sure the back of the house and front of the house is adequately staffed to offer efficient service, while reducing or maintaining labour costs.
Schedule On-Call shifts for the busier days and making sure your staff understand what that means (Usually Fri, Sat & Sun)
Schedule management for illness, emergencies, and slow periods - call in an extra person or extend existing shifts. Send someone home if slow - FIFO.
Be available to work a minimum of one weekend shift and one evening per week to ensure a high level of maintenance and service.
Inventory & Supply Management
Check deliveries on receipt for accuracy and give invoices to the Store Manager.
Maintaining Food & Beverage Cost of Goods based on the Forecast provided.
Regularly monitor and manage inventory levels, ensuring optimal stock levels to minimize waste.
Marketing & Promotions
Work with the Owner to promote Onua, bakery and café products and events to customers and ensure your team are doing the same.
Support Onua Social Media.
Promote and Support Product Sales or Promotions
Manage the site-specific email address.
Maintain POS system, menus, and pricing in cooperation with the Store Manager.
Organize and participate in weekly Café Manager Meetings.
Working closely with the Store Manager to ensure the correct people have been notified.
Along with the Store Manager, act as point person for maintenance of cafe equipment and furniture

Uphold compliance with Ontario public health regulations, WHMIS guidelines, and Onua's internal food safety protocols.
Conduct regular walk-throughs and inspections to verify cleanliness, food handling practices, and safe use of tools and equipment.
Ensure accurate record-keeping of health and safety checklists, temperature logs, incident reports, and any regulatory inspections.
Promote a culture of safety and accountability, reinforcing daily standards through staff training and leadership by example.

Education in Hospitality, Business Management, or a related field.
Prior experience in managing a bakery or cafe and food services
Good judgment and decision-making abilities while communicating with customers and Onua team members.
Skilled at working in a fast-paced environment while maintaining priorities and a high level of performance.
A minimum of 4 years of experience in cafe or restaurant management, preferably in a similar setting.
Proven track record in successfully supervising or managing cafe operations, including inventory and financial oversight.
Demonstrated experience in team leadership, including hiring, training, and performance management.
Prior exposure to analyzing sales data and implementing strategies to drive profitability.
The ability to communicate in French is an asset.

Additionally, possession of a Food Safe, SafeCheck, Food Handler or equivalent certification plus Level A First Aid and Basic CPR certification is preferred.
