OverviewPlayground is seeking an agile, change-oriented F&B Director to lead multi-venue food and beverage operations, culinary consistency, and guest dining experiences across our 24/7 gaming and entertainment complex. Translating corporate discipline into a fast-paced environment, you will build operational structure across high-volume dining, lounge/bar concepts, floor beverage service, and VIP culinary hospitality.
Key ResponsibilitiesChange Management:
Implement standardized operating procedures (SOPs), food safety/hygiene protocols, quality audits, and service benchmarks across all F&B touchpoints.
Hierarchy & Alignment:
Navigate corporate hierarchy to align kitchen (BOH), front-of-house (FOH) service, F&B gaming floor teams, and VIP hospitality behind unified strategic initiatives.
Financial & Operational Execution:
Drive rapid decision-making during peak volume, manage labour efficiency, monitor operational F&B KPIs, control Cost of Goods Sold (COGS), oversee inventory, and maintain service standards.
Guest Experience & Service Recovery:
Establish guest satisfaction metrics (CSAT), formalize F&B service recovery protocols, and elevate menu delivery to enhance player retention across amenities.
Talent & Compliance:
Lead team development across F&B operations, improve retention, and enforce safety compliance and food hygiene standards.
Requirements & Qualifications
Hospitality and F&B Leadership: Proven track record as an F&B Director in high-volume entertainment venues, hotels, resorts, casino/gaming complexes, or Brand Director for a major chain.
F&B Financial Acumen: Strong background in menu engineering, inventory control, labour optimization, and food/beverage cost management.
Corporate Rigour: Experience in structured corporate hospitality environments with demonstrated experience leading change management and formal operational frameworks.
High-Volume Agility: Superior ability to manage high-stress, high-volume F&B operations without sacrificing quality, consistency, or staff performance.
Sector Adaptability: Willingness and capacity to quickly learn gaming industry nuances, reward systems, and F&B dynamics.
Language Proficiency: Professional bilingualism (English/French).
