Lead Cook (Secure Custody)

Job Responsibility:

The purpose of this position is to prepare and serve nutritionally balanced and appropriate meals for the Residence's youth and staff, including special needs diets. To ensure Lead Cook services reflect best practices as defined by BCS Policies and Procedures and PYC Practice Manual. The Lead Cook will ensure the efficient operation of food services, providing support to full-time and relief cooks. In addition, the Lead Cook will provide assigned housekeeping duties in relation to kitchen area and storage room. The Lead Cook reports to the Office Manager.

Position Responsibilities

Food Preparation/Menu Planning

Provides cooking services to staff and youth of the program by performing duties such as:

• Prepare and develop well balanced menus based on sound knowledge of dietary standards, the Canadian Food Guide, personal observation of likes, dislikes and religious and medical consideration of youth wherever possible;
• Review menus on a regular basis;
• Prepare meals for 40 - 60 persons by
• calculate volume of food required to be cooked to provide adequate meals for staff and juveniles
• serving food, ensuring correct portions, etc.
• ensure that meals are prepared for youths admitted between regular meal periods
• ensure that lunches are available for youth and staff who are on outings, children going out to school
• ensure food services for special events, such as open houses, volunteer recognition events, service club events, etc., for up to approximately 200 people.

Coordinator of Kitchen Operation

• Provide support to full-time and relief cooks;
• Notify Supervisor when repairs to appliances or equipment are needed;
• Ensure that policies and procedures are followed.

Order Kitchen Food and Supplies/Stock

• Prepare food orders; ensure groceries are ordered as necessary;
• Check confirming and storing food orders;
• Monitor and rotating stock;
• Provide estimates for bulk purchases/tendering;

Safety and Security of the Kitchen

• Ensure the kitchen and dining area is properly maintained, e.g., washing dishes, cleaning floors, oven, fridge, counters, tables, cupboards, etc.;
• Ensure that sharp, dangerous, utensils are accounted for and kept under lock and key when not in use;
• Ensure Health & Safety Programs/Standards are followed.
• Ensure the security of the kitchen by completing cutlery counts, locking up sharp utensils when not in use.

Overseeing Resident (Youth) Helpers

• Oversee the work of the resident (youth) helper;
• Other duties as assigned.
• All incidents, and other hazardous occurrences affecting Banyan's staff, clients or the organization are to be reported according to Banyan policy.

Qualifications

• Formal training as a Chef and/or equivalency based sufficient and acceptable experience with volume cooking preferably in an institutional setting or large restaurant.
• Demonstrated experience using knives, deep fryer, ovens, stoves, steamers, bot plates and cleaning equipment such as brooms, mops, etc.
• Knowledge of Computer skills, including Microsoft Office Suite and Outlook.
• Familiarity with Occupational Health and Safety Act (OHSA).
• Current First Aid /CPR
• Maintain an acceptable Criminal/Vulnerable Sector Record and Health Assessment
• Fluency in other languages including Sign Language (ASL) is an asset

Working Conditions

• Under normal conditions the Lead Cook will perform the majority of staff business from the designated facility/program setting within the kitchen area.
• Work is performed under the general supervision of the Office Manager.
• Hours of work will regularly fall within normal business hours (24x7 operations); evening, weekend, rotational shifts and holiday hours may be required based on operational needs.
• The Lead Cook at times will work alone or with other cooks.
• May also work with physically aggressive residents (youth) for a short period of time as part of the youth Case Management.
• Will be in close proximity to youth when serving meals.

Job Type: Full-time

Pay: $42,323.00-$49,472.00 per year
