Resort Executive Sous Chef

The Resort Executive Sous Chef is responsible for excellence in product presentation, meeting all budget costs in assigned location, and for productivity of food service employees. They will be familiar with all food and beverage outlets at the resort and are able to assist when needed. They will provide ongoing employee training and recipe development, in conjunction with the Resort Executive Chef. They will always maintain a constant high standard of cleanliness. The Resort Executive Sous Chef works on the production and preparation line of the kitchen, is present during peak business times, and must be familiar with responsibilities of the Resort Executive Chef to take command during their absence.
Essential Functions:
- Ability to understand and control labour and food costs.
- Daily measurement of labour schedules and requirements, according to budgeted labour costs
- Daily assessment of food ordering and preparation requirements (par sheet levels)
- Ongoing staff training through example and leadership.
- Continually monitor quality of food to guarantee guest satisfaction, in relation to guest comment cards, as well as to ensure quality meets outlet specs.
- Inspect kitchen facility daily for hygiene, safety, and sanitation, implementing corrective procedures using the opening and closing checklist.
- Communicate with the Resort Executive Sous Chef and offer recommendations for increasing revenue or decreasing COG’s or labour.
- Responsible for the tracking of transfers through multiple outlets
- Ensure that the business interests of the Mountain Village are met on a consistent basis in the assigned location.
- Other duties as assigned.
Experience/Requirements:
- Red Seal Qualification
- Food Safe level 1
- Must be available for full-time year-round work.
- 2-4 years supervisory experience in a high-volume kitchen.
- Experience in Neapolitan pizza and Forno pizza oven use an advantage.
- Resort and/or catering experience preferred.
- Excellent leadership, decision making and people skills.
- Ability to organize and prioritize multiple tasks simultaneously.
- Position requires strenuous physical work including heavy lifting, pushing, or pulling.
- Should be able handle excessive heat and excessive hours of standing and stress.
