Restaurant Overview
Pokey Okey Shokudo is more than just a poke bar, it is also a diner serving a range of Japanese comfort foods like katsu and gyudon. The restaurant also aims to showcase other elements of modern Japanese culture. Though it may be small (10 seats), its impact on the local food market will be significant.
Summary
The Head Chef at Pokey Okey Shokudo is responsible for maintaining high standards for food quality and operational efficiency in the kitchen. This role will be supported by a store manager in order to allow for more focus on the food and less on admin. The direct superior for this position would be the executive chef at Pokey Okey.
Responsibilities
- Oversee all kitchen operations and manage the culinary team effectively.
- Consistently execute on basic menu provided by HQ
- Develop special and seasonal menu items
- Train and mentor kitchen staff to enhance their skills and performance.
- Monitor inventory levels and order supplies as needed to ensure smooth operations.
Requirements
- Strong culinary ability
- Proven experience as a Sous Chef or similar role in the restaurant industry.
- Strong leadership skills with the ability to manage a diverse team.
- In-depth knowledge of food safety regulations and best practices.
- Ability to adhere to and enforce SOP
- Japanese language not required but very beneficial for communication
