Bushidō , an extraordinary Kaiseki dining experience inspired by the ancient Japanese code of the warrior—honour, discipline, respect and mastery.

Under the culinary direction of  Chef Yi-Joo Na , the evening unfolds across  four of Casa Loma’s historic heritage rooms , with guests journeying from one room to the next as the multi-course Kaiseki dinner progresses. Each new setting introduces another chapter of the experience, with its own courses, atmosphere and sense of discovery.

Rooted in the precision, seasonality and artistry of Japanese Kaiseki, each course reflects the philosophy of Bushidō and the pursuit of mastery. The grandeur and history of Casa Loma provide an unexpected backdrop, bringing Japanese culinary tradition together with one of Toronto’s most extraordinary landmarks.

MAÎTRE D’ / HEAD HOST

Position Summary

The Maître d’ leads the guest arrival and departure experience while protecting accurate allergy communication and properly timed seating. This role manages the host stand, coordinates the room with the kitchen and floor team, and ensures every guest receives a calm, personal and polished welcome, handover and farewell.

Key Responsibilities

• Review the reservation book before service and identify celebrations, returning guests, VIPs, allergies, dietary restrictions and pacing considerations.
• Confirm the cover count with the kitchen, brief the floor team and complete the room check before doors.
• Acknowledge every arriving guest within ten seconds, confirm the reservation and party size, and offer assistance with coats and bags.
• Escort guests at their pace, assist the principal guest with seating and introduce the assigned server by name.
• Anticipate departures, prepare coats, thank guests by name and record useful preferences in the guest profile.
• Lead with clear assignments, calm communication and consistent presentation standards.
• Never promise allergy accommodation without confirmation from the chef or manager, and never rely on verbal communication alone.
• Maintain a quiet, composed presence and use respectful gestures, language and farewell etiquette.
• Consult the kitchen before promising the full menu to guests arriving more than 15 minutes late.
• Other duties and responsibilities as assigned by management.

Qualifications and Knowledge

• Leadership experience in refined dining, luxury hospitality or tasting menu service is preferred.
• Strong reservation management, organization, guest recognition and communication skills.
• Working knowledge of the thirteen course kaiseki format, common allergens and Bushido’s service philosophy.
• Excellent judgement, discretion, attention to detail and composure under pressure.
• Availability for evenings, weekends, holidays and extended tasting menu services.
• Must be able to legally work in Canada
