NOC 63201 - Butchers - retail and wholesale

Job Summary

Prepare and portion meat products for retail and wholesale customers while ensuring quality and safety. Provide product knowledge to customers and support inventory and order fulfillment tasks.

Main Duties

• Inspect, trim, debone and cut primal and subprimal meat into retail and wholesale portions according to specifications.
• Operate and maintain cutting equipment and hand tools such as knives, band saws, and grinders safely and efficiently.
• Weigh, package, label and price products for display or shipment, and prepare custom or bulk orders as requested.
• Maintain cleanliness of work areas and equipment, follow sanitation procedures, and adhere to food safety standards.
• Monitor and rotate inventory, record waste and spoilage, and assist with receiving and storing incoming shipments.
• Provide customer assistance on product selection, cooking methods and portioning, and coordinate special orders.

Requirements

• Secondary school diploma or equivalent preferred.
• Previous experience as a butcher, meat cutter, or in meat processing.
• Demonstrated ability to use cutting tools and meat processing equipment safely.
• Knowledge of meat cuts, trimming techniques, portioning and yield optimization.
• Understanding of food safety and sanitation practices; food handling certification is an asset or willingness to obtain one.
• Ability to lift heavy loads, stand for extended periods and work in cold environments.
